So, my immediate goal is to figure out how, in Zenoss Core 5.1.1, to disable the zenpop3 daemon. As a part of that, I am really wondering how to tell which ones are so specialized that I do not need them, and which ones are really important or useful, and how to configure them appropriately.
Any suggestions?

In Control Center, we editing the zenpop3 service and found an "Instances: 1" setting, so we set that to 0 then stopped the zenpop3 service.
We don't want to try restarting the machine until necessary.
We are hoping that will be sufficient to keep that service from running until needed (probably never).

In Zenoss, go to the Advanced tab, select the Control Center tab. You can start and stop daemons in here and select which ones are set to Auto Start.

Have a look at the Zenpacklib (now ZenPack SDK) documentation under Development Ebvironment -https://zenpack-sdk.zenoss.com/en/latest/development-environment.html . Towards the end is a section on "Setting Services to Manual Launch" which I think answers your question. Cluther provides a list of services that you mighr consider setting to manual launch in a development environment - it certainly includes zenpop3.
