I'm new to monitoring systems in general. I've managed to set up Zenoss from the prebuilt VM. Just wondering how would I go about adding servers outside of the local network.

Simply add them like any other device. Provided the underlying IP routing works between your Zenoss server and your target device, and there are no firewalls in the way, it just works.
