I would like to change the value of zSnmpMonitorIgnore on a whole device class, can this be done via the graphic interface It seems to be possible but I can't find the way to do it.

Thanks to Jan_Garaj in the irc, got an answer. It's pretty simple once you know how to do it.
Infrastructure -> Select the class -> Details -> Configuration Parameters
Once modified there the changes will afect only the devices in that class without local changes.
