Hopefully this is a quick answer, but how do you change the order in which the graphs are displayed i.e. processor followed by ram usage followed by...etc.

If you go into the monitoring template and change the order of the graph definitions that are listed there that should change the order. If you have multiple templates if you change the order that they are bound to the device/device class that should change the order of those.
