I'm wanting to set the zWinUsername and zWinPassword globally for all of my windows servers. Is there a way to accomplish that without having to edit each device manually

On the infrastructure tab, click the device class that has your windows machines (/server/windows/) and then click the "details" button above the device class listings. Click configuration properties and this will set the default for all devices that are members of that class.
