I performed Autodiscovers of all of my subnets prior to getting SNMP setup on the ones that matter. In testing my SNMP config on a few Windows server.. how do I make Zenoss re-check those hosts

Modeling also happens by default every 12 hours, don't forget to put the SNMP info in for those hosts as well!
You can test to make sure it's working by doing a snmpwalk.
